1. Italia-Style Mushrooms with Sausage
INGREDIENTS for 4 servings
- 2 cups mushrooms
- 1 cup marinara sauce
- ¼ cup Parmesan, shredded
- Salt and black pepper to taste
- 1 lb Italian sausages, sliced
- 1 clove garlic, finely diced
- 1 onion, diced
- ½ tbsp coconut oil
DIRECTIONS and total time: approx. 32 minutes
Clean the mushrooms, then cut off stems. Set aside the caps on a paper towel to drain. Mince the stems in a bowl. Set your IP to Sauté and heat the oil. Add garlic, onion, and minced mushroom stems and cooks for 5 minutes until softened. Set aside. Place the sausages and cook until browned, about 3-4 minutes.
Remove to a bowl, and add the Parmesan cheese. Mix well. Carefully spoon the sausage mixture into the mushroom caps. Pour the marinara sauce into the IP and put the mushrooms over. Add in 1 cup of water. Seal the lid, select Manual at High, and cook for 8 minutes. When done, release the pressure naturally for 5 minutes. Serve.
2. Cheesy Hamburger Dip
INGREDIENTS for 6 servings
- 3 ½ lb ground beef
- 1 onion, finely chopped
- 6 tortilla chips
- 1 box Velveeta cheese, cubed
- 1 jar (16-oz) chunky pace salsa
- 3 tbsp olive oil
DIRECTIONS and total time: approx. 40 minutes
Heat olive oil on Sauté and brown the meat for 8-10 minutes. Add onions at the 5th minutes of the meat cooking and mix well. Add salsa, 1 cup of water, and cheese cubes and stir. Seal the lid and press Poultry. Cook for 20 minutes at High. After cooking, do a quick pressure release. Serve with tortilla chips.
3. Best Bacon Wrapped Mini Smokies
INGREDIENTS for 12 servings
- 1 lb bacon slices
- 14 oz mini smokie sausages
- 2 tbsp vinegar
- ¾ cup brown sugar
DIRECTIONS and total time: approx. 35 minutes
Cut the bacon slices in half. Wrap a slice of bacon around each individual sausage. Put the seam side facing down in a baking dish. In a small bowl, mix vinegar and brown sugar. Drizzle this over smokies in the dish. Place in the fridge overnight.
Pour 1 cup of water into the IP and fit in a trivet. Remove the smokies from the fridge and place the dish on the trivet. Seal the lid and press Manual. Cook at High for 20 minutes. After cooking, do a quick release.
